Chicken 65 Recipe with Marination and Full Guide

  • ·        250-300 grams of tender boneless chicken
  • ·        1 egg white or whole egg
  • ·        2 tbsps. corn flour
  • ·        1 tbsp. rice flour or cornflour
  • ·        Oil

  • ·        ½ tbsp. cumin/ zeera
  • ·        ½ tbsp. chopped garlic
  • ·        ½ tbs. pepper powder
  • ·        2 green chillies
  • ·        Few sprigs curry leaves

Seasoning mixture to coat the chicken:
  • ·        ¾ tbsp. red chilli powder
  • ·        ½ tbsp. sugar
  • ·        2 Cloves
  • ·        Salt
  • ·        2 tbsp. thick yoghurt/ 1 tbsp. vinegar with 2 tbsp. water

After washing chicken under running water, drain off completely. Marinate the chicken with marination ingredients. Leave it for 45 minutes to 1 hour. Marinating it overnight yields the best soft juicy chicken.

Prepare the seasoning mixture. Add red chilli powder, garlic paste, sugar, salt, yogurt vinegar with 2 tbsp. water. Set this aside.

Sprinkle dry flour over the marinade. If you want to use egg, you can. Mix it well. If needed sprinkle little water for good binding.

Heat oil in a deep pan until hot enough to fry the chicken. Fry until cooked fully and gives a light golden colour. Stir while frying for even frying.

Heat a pan with 1 tbsp. oil, add curry leaves, green chillies and cumin. Fry till the leaves crisp. Put this aside for garnish.

Add the seasoning mixture we prepared earlier and let it begin to bubble.

Add the fried chicken and toss and fry on medium heat till it absorbs all the moisture and the raw garlic sell disappears.

Serve with onion wedges.
